Passing on the cake
First increase the starter
To the starter you have been given add a teaspoon of sugar and a tablespoon of plain flour together with 250ml of warm water. Mix together well, cover and leave in a warm place. Add another teaspoon of sugar and a tablespoon of flour the next morning, mix well, cover again and left for 15 to 20 minutes. The starter is then ready for use.
At this point the starter can be used within 24 hours or left for up to 3 days, but no longer.
- 500g Self Raising Flour
- 250g soft brown sugar
- 250g Raisins
- 250g Walnuts
- 1 small apple diced
- 1 1/2tsp baking powder
- 1/2 tsp allspice
- 1/2 tsp bicarbonate of soda
Combine the dry ingredients in a large bowl and set aside. Into another bowl mix the starter with 1 large egg, 2 tablespoons of cooking oil and 1 teaspoon of vanilla extract. At this stage you can take one cup from the mixture and pass to a friend. Add to this the contents of the other bowl and mix together thoroughly. Pour into a greased and floured 1lb loaf pan, or alternatively use a loaf tin liner and bake at Gas 4, 180C, 350f for an hour. Cool then dust with icing sugar.
